Baking Tip #7: Use a higher temp in your oven for bigger muffin top

One of the best-kept secrets for achieving tall, domed muffin tops is starting your oven at a higher temperature for the first few minutes of baking. This gives the muffins a burst of heat that helps them rise quickly before the tops set, creating that perfect dome.


Here’s How to Do It:    


1.    Preheat your oven to 425°F (220°C). Even if your recipe calls for 350°F or 375°F, this trick will work! Preheat to 425°F first.

2.    Bake the muffins at 425°F for the first 5-7 minutes of the baking time. During this time, the higher heat activates the baking powder and soda which causes the muffin batter to rise rapidly, giving you a tall muffin top.

3.    After 5-7 minutes, reduce the oven temperature to the regular baking temperature (usually 350°F or 375°F) and continue baking until the muffins are done.

 

Bonus Tip:

Fill your muffin cups nearly to the top with batter (instead of the usual 2/3 full) to encourage even more rise. The combination of a fuller cup and the initial high temperature ensures a beautiful, bakery-style muffin top every time!  Be sure to use some pan spray or muffin papers to make sure they come out of the pan nice and easy!
